FabricaIn 1935 a warehouse located in Gimonde, near Braganza just at the doors of the Natural Park of Montesinho, developed its activities in the trading of fertilizers for agriculture and traditional products as well as of some cold meats manufactured by themselves.

As time went by purchasers came looking mainly for cold meats and other typical delicacies of the region which lead to the business including catering services.
 
The Traditional Restaurant D. Roberto has more than 70 years of activity under the slogan “Where tradition is still as it was”.

Therefore, from the beginning, cold meats and smoked meats of the region had a place in the most characteristic menus doing their bit in maintaining tradition alive and, simultaneously enhancing the presence of the business in the region.

In 1975 the consolidation of the company took place through the creation of the brand A. Montesinho, Lda and expanding the business, which started to include rural tourism by means of the refurbishing and creation of lodgings.

These are the Casas da Mestra in Bísaro, Guieiro and Forno (these two are in la Quinta das Covas) without forgetting D. Roberto which in the mean time, included a warehouse and a shop of regional products.

Therefore, in 1997 the company Bísaro Salchicharia Tradicional, Lda. was established separating this business line from the group and granting a new dynamic.

Their concern about quality, lead them to obtain the certificate of the Quality Management System by means of the NP EN ISO 9001 en 2006.

Some products of Bísaro Salchicharia are also identified with the symbol GPI- Geographical Production Indication- obtaining Community protection but with the obligation of continuing with rigorous rules in the production methods and in the type of raw materials used. The company has served, from its first steps, the economic development of the area of Braganza and specially that of the freguesía of Guimonde, region in which the company is located. This development has taken place in several aspects: 
  1. Production of products typical of the region, the regional smoking process which contributes to revalue local resources and to promote the transmontana gastronomy around the country and abroad.

To sponsor and promote the concelho within the regional, national and international context by means of the steady conquer of new markets both in broad commercial spaces and in retailers being helped by different marketing actions developed through the main regional and national communication media.

  5. Expansion of activities of the company following a logic revaluation of two of the products with the greatest growth potential of the region: its rich gastronomy and tourism which are clearly related.
At the beginning of 2009, the company was certified by the food safety rule NP EN ISO 22000:2005.
